June is Dairy Month

In honor of June Dairy Month, a special event was held at the Spearfish Food Pantry. It was an awesome opportunity to share information on the value of dairy products.  Kim Hepper RD LN,, Clinical Dietician was on hand with health information, tips and treats.  Three servings of dairy every day can help you meet your calcium needs in a delicious and affordable way. Dairy foods also offer five other key nutrients to include: protein, potassium as well as vitamins A, B 12 and Vitamin D. These nutrients are often lacking in the diets of Americans. One serving of dairy is 8 ounces of milk, 8 ounces of yogurt or 1 ½ ounces of cheese.

Thank you to Midwest Dairy and the Spearfish Food Pantry for giving me the opportunity to offer delicious Crunch Peanut Butter Banana Parfaits to participants and staff at the food pantry on July 6, 2016. Deb Martius, the Spearfish Food Pantry Director generously set up a tent and table to make the event extra special.

Crunchy Peanut Butter Banana Parfait:
Servings: 4, Preparation time: 10 minutes
Ingredients:

4 cups fat-free plain Greek yogurt

4 Tablespoons creamy peanut butter

6 Tablespoons chopped nuts

16 Pretzel twists, crumbled ( about 2 Tablespoons)

4 small bananas, sliced

Directions:

1.       In a small bowl, mix yogurt and peanut butter.

2.       In a another bowl, mix nuts and crumbled pretzels.

3.       In a tall glass or small bowl, layer ½ cup yogurt, half of the banana slices and 2 Tablespoons of the nut/pretzel mixture.

4.       Repeat layers and serve.
